Introducing: Things I Wish They Would’ve Told Me

There are so many great things about having the opportunity to go to university. First and foremost, you’re able to gain specialized skills in the career field of your choice–no more forced courses that high school makes you take (I’m lookin’ at you, Canadian Law class)! And then of course there’s the freedom that comes with going to university: you make your own hours, you manage your own day-to-day, and you more or less become one of society’s independently functioning members. I could go into endless detail about the life lessons and ridiculous experiences I had the pleasure of living through while at school, but these are things best learnt yourself through your own trials and tribulations. What I think would be far more helpful for us all is if someone put together a list of all of the other things we need to know when we leave the nest.

In the few years since I completed my undergraduate degree, I’ve found myself saying on more than one occasion “why the heck didn’t anybody tell me that?”. University teaches you a great many things about being a professional, finding success in your field, and hopefully how to get a job relevant to your degree… but what about the other stuff? What do you do once you’ve got that job? What about leaving it? What kind of expenses exist when my dad stops doing my taxes and paying my bills for me? Seriously, why doesn’t anybody have a class for this? I learned pretty much all I could learn (speaking from the standpoint of my mental state and desire to know) about mechanical engineering, but I’d have completely eaten up a course about life. What kind of things do I need to look for in a good apartment? How do I ensure that I’m getting paid what I deserve?

So over the next month or two (maybe longer), I’m going to try to answer some of these questions with what I’ve learned thus far. It will by no means be an exhaustive how-to, but maybe you, like 2-years-ago-Erica, haven’t even thought about these questions yet. Maybe you have and you don’t know where to start. Or maybe you’ve got your own answers to these questions! If this resource was available to me a few years ago, it would have made my little-lost-puppy of a life seem a bit more manageable. So until they create a Life 101 course for us at university, my little corner of the interwebs will have to do.

Chocolate Almond Butter

For the next few weeks, my cooking and baking will be less about the inspiration I get from my day-to-day, and more about using every ingredient up that I’ve bought and hoarded over the last year (let’s hope nothing’s been in my pantry longer than that). This includes the big pile of dried black beans I bought when I decided that this would be cheaper than buying canned (but who knew the volume increased when soaked? I have so many beans). This includes drinking unholy amounts of tea, in flavours I forgot even existed (pomegranate-mint? Seriously?). This includes the massive 1kg bag of almonds that I bought when I needed… 1/2 a cup for a recipe. Yikes.

The hard part with the almonds is that raw almonds tend to give me heartburn. I’m convinced it’s because of the high fat content, but regardless, eating them plain isn’t really an option for me. And also, eating 1kg of unseasoned almonds is kind of unappealing in itself. As puzzled as I was about the future of this bag o’ nuts, my problem was solved when my food processor shouted at me from the closet “Ericaaaaaa. Almond butterrrrr!“. Why didn’t I think of that?

Again, plain old nut butter just doesn’t get my juices flowing, so I thought I may as well add something else into the mix and see what happened. Obviously I had a bit of chocolate on hand, so I decided to use this easy peasy recipe from Oh She Glows, and see what all the fuss is about when it comes to DIY nut butters. The verdict? Soooo gooood. I like the texture of my nut butter much better than store bought, and I like that it doesn’t separate. The original recipe says the butter should be stored in the fridge, but I found it was too hard to spread when it came time for eating. I had no problems leaving it out on the counter top, since I was eating it on the daily, but if you’re going to eat it over a longer term then you might consider refrigeration. Then again, the only ingredients are almonds, chocolate, and coconut butter, none of which need to be refrigerated on their own, so you can choose your own adventure with that one. But in the end, I highly doubt this will be around in your kitchen for long, because it’s a super delicious, super satisfying option for breakfast, snacks, and yes, even dinner. Really.

Ingredients:

  • 2 cups raw almonds
  • 1/2 cup chocolate chips (I used dairy-free)
  • 1 tsp coconut oil (or another oil should work)
  • 1/8 to 1/4 tsp salt, to taste

Directions:

  1. Place the almonds in a food processor. Process for about 15 minutes, scraping down the sides of the bowl every minute or so as necessary. This is a really long and somewhat annoying process–as soon as you scrape the bowl down and turn the processor back on, you’ll feel like everything’s stuck to the sides again within seconds. It takes a while, but don’t stop until you’ve got a creamy mixture. It will happen, I promise. It takes at least 15 minutes (see photo below for the stages of almond creaming).
  2. Just before the almonds are completely smooth, add the chocolate chips and coconut oil to a small pot. Melt on low. Remove the pot from heat when there are still some clumps left in the chocolate chips. You don’t want to burn the chocolate!
  3. Add the melted chocolate to the almond butter (still in the processor) and process for a few more minutes. Add the salt and process more.
  4. Once the mixture is smooth and creamy, transfer to a container and store in the fridge or cupboard. If you store it in the fridge, note that it firms up, so you may need to take it out about 15 minutes before you want to spread it.

I learned through this kitchen endeavour that making nut butter is a bit strenuous on a food processor. My little unit got pretty hot while I was creaming the almonds, so I ended up making this a two-evening process to let my machine cool down in between. I just stored the partially processed almonds in the fridge overnight. Either way, it’s a bit of work, but so worth the effort. If this isn’t the best nut butter you’ve ever had (and that’s coming from a true peanut butter fanatic), well I’ll be damned.

 

Damn Interesting

Sometimes, despite the number and variety of online blogs and websites I like to read, I find myself in an internet rut. Even though I like to mix up the subjects I read about (fashion, business, science, beauty, current events, and the news), I just plain find myself in a rut. I don’t want any more short stories, I don’t want to look at any more clothes that I can’t justify buying, and I just want to read something that’s damn interesting, for goodness sake. So, I googled it.

That was a lie. My boyfriend sent me the link to the Damn Interesting website knowing full well that the science geek and story-lover in me would love this site, which I completely do. If you’re looking for something awesome, interesting, and completely factual to read, this site is for you. If you’re looking for a great topic of conversation for your next awkward get together or office function, hey, this is for you! And even if you’re not much of a history buff at all (I’m honestly not either), you’ll find this website super interesting. How about the man who spent 40 minutes falling through a storm cloud after he’d ejected from his aircraft? Or the guy who beat astronomical odds and outsmarted a game show to win tens of thousands of dollars? Internet-land can be a pretty fun place on the day-to-day, but sometimes a good old story that makes you shake your head and go “no way…” is just what the doctor ordered. Nerdy little tidbits of information are my favourite to whip out in the midst of conversation (well, those and terrible pre-schooler jokes), and with the discovery of this little online gem, I’ve got a whole new arsenal of material.
